Italian Beef Sandwiches

Ingredientes: 

1 tablespoon olive oil
1 onion (8 oz.), peeled and coarsely chopped
3 carrots (8 oz. total), peeled and coarsely chopped
3 stalks celery (4 oz. total), rinsed and coarsely chopped
4 pounds boned beef chuck eye roast (also called boneless chuck filet or roll), rinsed
1 teaspoon black peppercorns
About 2 teaspoons salt
3 to 5 tablespoons Asian chili oil
10 to 12 crusty sandwich rolls (3 to 5 oz. each), sliced open

Instrucciones: 

1. Pour olive oil into a 6- to 8-quart ovenproof pan over medium-high heat; when hot, add onion, carrots, and celery and stir often until onion is limp, 6 to 8 minutes. Add 3 quarts water and the beef, peppercorns, and 2 teaspoons salt. Cover pan, increase heat to high, and bring mixture to a boil.
2. Transfer pan, tightly covered, to a 300° regular or convection oven. Bake, turning meat over after 2 hours, until very tender when pierced, about 3 1/2 hours.

3. Lift beef from broth and set on a large, rimmed dish. If meat is tied, cut and remove strings. With two forks, tear meat into large shreds, discarding any large pockets of fat. Skim and discard fat from juices in pan (see notes); add salt to taste.

4. Brush chili oil lightly over cut sides of rolls to taste. Mound meat on roll bottoms and drizzle each sandwich with 2 to 3 teaspoons salsa verde; offer remaining sauce to add to taste. Add salt to taste. Ladle broth into small bowls to dip sandwiches into.

Egg Sandwich

Ingredientes: 

1 teaspoon curry powder
1 teaspoon mayonnaise
5 eggs6 slices breadmargarine or buttersalt and pepper

Instrucciones: 

Put the eggs in a saucepan and cover with water, place lid on and bring to a boil, then when boiling. remove lid and lower heat to simmer or if electric stovetop you can turn the heat off as the element will have enough heat in it to finish the cooking process of 5 miutes simmering. Remove from stovetop and drain, then cover the eggs with cold water and let sit for 5 minutes.Take the eggs out of the water leaving the water in the saucepan to rinse the eggs after shelling them and then placing them in a bowl lined with paper towles to dry. Lift the paper towles out from under the eggs and using a steak knife and a dinner fork cut up the eggs finely then mash with the fork, add the curry powder a little at a time to suit your own taste and then add the mayonnaise and mix well.Spread the bread slices with margarine or butter or even leave dry if preffered, spread the eggs on and sprinkle with salt and pepper or you can add the salt and pepper to the egg mixture.

Easily adaptable into a Monte Cristo by just adding chicken, this wonderful battered then fried sandwich makes a great lunch with a tossed salad

Ingredientes: 

1 tablespoon Dijon mustard
2 tablespoons mayonnaise
4 tablespoons butter or margarine, softened
6 slices white bread
6 slices Swiss cheese
12 slices thinly sliced deli ham

4 tablespoons all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
2 eggs
1/4 cup water

1 tablespoon vegetable oil

Instrucciones: 

Use 2 tablespoons of the butter to spread over one side of each slice of bread. On three of the slices, spread a layer of Dijon mustard over the butter, and top each with 4 slices of ham. On the other three, spread mayonnaise, and top each one with 2 slices of Swiss cheese. Press ham and cheese sides of sandwiches together.
In a flat bottomed dish, whisk together the flour, baking powder, salt, eggs, and water until blended. Set aside.
Heat remaining butter and vegetable oil in a large skillet over medium heat. Dip both sides of each sandwich in the egg mixture, and fry in the oil and butter until browned, flipping to brown on each side.
