Crab Rolls

Ingredientes: 

1/2 lb. crabmeat
1 beaten egg
1/2 cup tomato juice
1 1/2 cups bread crumbs
1/2 tsp. salt
1/8 tsp. black pepper
1 Tbs. cumin
2 Tbs. mayonnaise
2 Tbs. fresh lemon juice
1 Tbs. chopped parsley
oil for pan frying

Instrucciones: 

Directions
Mix crab, beaten egg, tomato juice, bread crumbs and seasonings. Place the mixture in the refrigerator and chill for three hours. Roll out the mixture to form cylinders, approximately three inches long. Pan fry in a single layer, turning half way through when the bottom begins to brown.

When both sides are brown, the crab rolls are done. Drain excess oil on paper towels and serve hot.

Bruschetta

Ingredientes: 

One big rounded crusty bread roll
Cherry (plumb) tomato 200/250g
Garlic
Olive oil
Whole black olives
Salt
Fresh basil

Instrucciones: 

In a small bowl, mix together tomato, basil and garlic finely chopped, salt and let marinate while you prepare the balance of ingredients.
Preheat oven to 350c.
Place bread slices on baking sheet and toast for 5 minutes both sides.
Spread the mix over bread rounds and return to oven for another 3-5 minutes.
Drizzle with a little oil before serving.

Grilled Pizza

You will need a grill with a cover, a hot fire of course,
a pizza peel and/or a long spatula or two, and/or a set of tongs,
mixing bowls, and a food processor or electric mixer.
A Pizza slide (or flat metal cooking or cookie sheet) and pot holders are essential.

Ingredientes: 

Dough:

You can either make your own dough from scratch or purchase pre-made dough from your local grocer. If choosing to make from scratch, see the dough ingredients below:

3 cups of all-purpose flour
1 1/2 cups of warmed water (about 110 degrees F)
2/3 cup of whole wheat flour
1 tablespoon of light olive oil
1 package of active dry yeast (RECOMENDATION: Fleishman’s Yeast)
1 1/2 teaspoons of salt
1 teaspoon of sugar

Toppings / Other ingredients:

Pizza Sauce
Mozzarella cheese
Oregano and Basil Flakes
Extra Virgin Olive Oil
Grated Parmesan Cheese
Sliced meats and vegetables*

Instrucciones: 

Place/combine water, oil, yeast and sugar in a small and very clean bowl. Let stand for 5 minutes or until the mixture bubbles.

Mix the all purpose flour, the wheat flour, and salt together preferably with a food processor or electric mixer.
While the flours and salt are blending, add the water/yeast mixture.
Mix for 2 minutes. Knead the mixture briefly on a lightly floured surface, and then place in a large, slightly oiled bowl and let rise in a warm place for 2-3 hours until the dough doubles in size.
Once the dough has doubled, lightly flour two cooking sheets.
On a floured surface, roll out 1/2 of the dough into a circle approximately 1/4 inch thick. (Be sure to make each pizza round small enough to fit on your grill.)
Place on a floured cooking sheet. Repeat this process until you have 2 pizza rounds.

Fire up the grill to high! Be sure grill is clean and the grids are lightly oiled.
Place one pizza round on the clean, oiled, and pre-heated grill. Grill pizza round for about 1 -2 minutes or until the bottom is browned.
With a set of tongs, flat cookie or cooking sheet, or long spatula, gently flip the pizza round over and grill it for an additional 30 -45 seconds. Remove from the grill and repeat the grilling process for the remaining round. Turn down the heat of your grill slightly while letting the pizza rounds cool a bit, and then top each with your favorite toppings.*
Let cool and serve!!!!

Cheese Rolls

Ingredientes: 

2 cups flour
1 tsp salt
2 tsp baking powder
1/3 cup butter
6 oz grated cheddar cheese
3/4 cup milk

Instrucciones: 

Preheat oven to 450°F.
Sift dry ingredients (except for cheese) into a bowl, mixing well.
Cut in shortening.
Make a well in the center of the flour and pour in the milk all at once.

Form a ball of dough and knead lightly on a lightly floured surface.
Roll out 1/4 inch thick and sprinkle with cheese generously.
Roll up, jelly-roll style and slice into pieces about 1 inch thick.

Place onto a greased cookie sheet and bake at 450°F for 12-18 minutes or until golden brown.

Veal Cordon Bleu

Introducción: 

As its name implies, this dish was once thought to be worthy of a blue ribbon. Over the years, however, in its overly meaty interpretation at numerous hotel restaurants and wedding receptions, it lost some of its original delicacy. Here, we make the veal and the layers of cheese and ham much thinner, which results in a truly refined version that's not too heavy — and that's equally suitable for dinner parties and simple family suppers.

Ingredientes: 

8 (1/8-inch-thick) veal cutlets (also called scaloppine; all the same size, about 2 1/2 oz each)
1 (1/2-lb) piece Gruyère
4 (1/8-inch-thick) slices baked ham such as Virginia
1 cup plain dry bread crumbs
2 teaspoons salt
3/4 teaspoon black pepper
3/4 cup all-purpose flour
2 large eggs
2 tablespoons unsalted butter
2 tablespoons olive oil

Special equipment: a meat pounder; a cheese plane
Garnish: lemon wedges; fresh parsley sprigs

Instrucciones: 

If cutlets are thicker than 1/8 inch, pound them between sheets of plastic wrap with flat side of meat pounder. Using cheese plane, shave enough cheese to make a double layer for each of 4 cutlets.

Pat dry 2 cutlets of the same shape and arrange 1 cutlet on a work surface. Put 1 slice of ham on cutlet, trimming ham to leave a 1/4-inch border of veal around the ham, then arrange a double layer of cheese on ham and top with second cutlet. Lightly pound 1/4-inch border around cutlets' outer edges to seal veal sandwich. Make 3 more sandwiches in same manner.

Line a baking sheet with wax paper. Stir together bread crumbs, 1 teaspoon salt, and 1/4 teaspoon pepper in a large shallow baking dish. Stir together flour, 3/4 teaspoon salt, and 1/4 teaspoon pepper in another large baking dish. Whisk together eggs, remaining 1/4 teaspoon salt, and remaining 1/4 teaspoon pepper in a third large baking dish.

Dredge 1 veal sandwich in flour, knocking off excess, then dip in egg to coat, letting excess drip off, and dredge in bread crumbs, patting to help them adhere. Transfer coated sandwich to a rack set on a baking sheet. Dredge and coat remaining sandwiches in same manner. Chill, uncovered, 1 hour, and let stand at room temperature 30 minutes before cooking.

Heat 1 tablespoon butter and 1 tablespoon oil in a 12-inch heavy skillet over moderately high heat until foam subsides. Add 2 veal sandwiches, then reduce heat to moderate and cook, turning over once, until golden, about 4 minutes total. Transfer to plates and wipe out skillet with paper towels. Cook remaining sandwiches in remaining butter and oil in same manner.

Cooks' note:
Chilling coated cutlets helps the coating to adhere when cooking.

Lime Chicken Soft Tacos

Ingredientes: 

1 1/2 pounds skinless, boneless chicken breast meat - cubed
1/8 cup red wine vinegar
1/2 lime, juiced
1 teaspoon white sugar
1/2 teaspoon salt
1/2 teaspoon ground black pepper
2 green onions, chopped
2 cloves garlic, minced
1 teaspoon dried oregano
10 (6 inch) flour tortillas
1 tomato, diced
1/4 cup shredded lettuce
1/4 cup shredded Monterey Jack cheese
1/4 cup salsa

Instrucciones: 

Saute chicken in a medium saucepan over medium high heat for about 20 minutes. Add vinegar, lime juice, sugar, salt, pepper, green onion, garlic and oregano. Simmer for an extra 10 minutes.
Heat an iron skillet over medium heat. Place a tortilla in the pan, warm, and turn over to heat the other side. Repeat with remaining tortillas. Serve lime chicken mixture in warm tortillas topped with tomato, lettuce, cheese and salsa.
